In celebration of the warmer months to come, I’ve got a brand new smoothie recipe for you. And, as always, it’s both delicious and good for you.
We all know that sun-kissed skin looks gorgeous but UV rays also cause major damage – so although this smoothie will beautify from the inside-out, don’t forget your daily sun protection too! [To be clear, I am far from preaching – I’m reminding my naughty sun-worshipping self more than anyone.] Love that skin of yours.
The creamy, tropical flavours of mango and coconut in this delish recipe will make you feel like you’re basking on a deserted white sandy beach listening to the lapping waves of a crystal clear sea. Yes please. And it’s full of vitamins A and E and other important antioxidants that will nourish and hydrate your skin, helping to protect against premature aging and promoting plump, glowing skin. YES PLEASE.
You’ll see that this recipe calls for coconut milk powder – something some of you may not have come across before (I hadn’t). It’s basically coconut milk in powder form which is perfect when your recipe only calls for a dash – simply stir in to smoothies, curries, soups, whatever you fancy really. The Coconut Company kindly sent me a packet a few weeks ago and I’ve almost run out already – it’s pretty fab, totally organic, and gives wonderful body to this smoothie.
Love your skin! mango & coconut smoothie
Makes two glasses
- 1 1/2 cups (350ml) coconut water
- 1 tablespoon coconut milk powder
- 1 ripe mango, peeled, stoned and the flesh cut into chunks
Blitz the coconut water and milk powder in a blender until the powder has dissolved. Add the mango flesh and blitz again until smooth.
