Something my dad has passed on to me is my undying love of hummus. I eat a lot of it. Really a lot. And I’ve tried them all.
My favourite? Homemade hummus comes out on top every time. And there’s really no need for embellishment – five ingredients and a blender is all you need!
Here’s my version to throw into the mix. It makes me happy. Simple as that. I hope it makes you happy too.
Happy hummus
Ingredients:
– juice 1 lemon
– 1 large garlic clove
– 2 tablespoons olive oil
– 3 tablespoons tahini paste
– 1 tin chickpeas (400g, approx. 240g drained), drained and rinsed
– good pinch salt, to taste
Method:
Put the lemon juice, garlic, oil and tahini into a food processor and blend for about a minute until the mixture has thickened. Tip: You can put all the ingredients into the mixer in one go if you’re desperate but putting these in before the chickpeas achieves a creamier result.
Add the chickpeas and a pinch of salt and blend until smooth. Taste and add more salt if required. Tip: If the mixture is too tight, add a couple of tablespoons of water and pulse again.
Serve with carrot sticks or pitta soldiers or whatever you fancy really.
